Looking for baked apple ideas - Dutch Oven

My son has a food allergy requiring that most fruits and vegetables be cooked or baked. He LOVES apples. Do any of you have any suggestions for an apple recipe in a dutch oven? This will be done on my MBGE with the BGE Dutch Cast Iron Oven. Thanks in advance :-)
Large, Medium, Mini, and Mini Max, a few too many accessories, 2 kids, 1 dog, and original wife. Lover of winter, powdery snow, and lots of golf.

This tastes better than you can imagine and is very easy The recipe describes cooking over charcoal briquettes, but you could put it on the egg at 300 - 350 and consider it done when the top starts to bubble. Thanks @Tjcoley, I think the kids would find this one to be a lot of fun. Thankfully he can eat the crust with no worries. Another option is Mountain Pies. Haven't tried them in the Egg, but should work. These were a big hit at our family reunion fire pit, using buttered bread and apple pie filling.
