King Ranch Mac and Cheese

I'm always on the lookout for things to do with leftover chicken and I figured that the recipe for King Ranch Mac and Cheese from Southern Living would be a hit. And it was. I didn't get any pictures of the chicken thighs cooking on the BGE from Sunday, unfotunately. And while this could have (and should have) been cooked on the Egg it wasn't, but it did have Egged chicken in it. After mowing the yard and then washing Olie, our German Shepherd, in about 100 degree heat, I really needed a shower. Once showered, I was wiped out and I didn't feel like going back out into the heat and firing up the Egg. Not to mention I would need another shower later. So laziness and the desire to sit in blessed AC trumped outdoor cooking last night.

Mixin' it all together in a CI Skillet, elbow mac, grilled chicken, cheese and a bunch of other stuff.

Topped with a Mexican Four Cheese Blend

After spending 25 minutes in that big box in the kitchen (should have been on the Egg, I know, I know. Next time, I promise)

Combining mac and cheese and King Ranch Chicken? Genius. Whoever came up with that should be given some type of award.

    When I'm not Eggin', I'm scootin'   Eggin' and 'cueing from Temecula Ca; an hour from San Diego, an hour and five minutes from Palm Springs, and an hour and a half from Los Angeles (yeah, right. With THAT traffic?)

  • I know, I know I have no pics so it didn't happen. I made this for the first time on Thanksgiving. I like to live dangerously...I took it to the inlaws. This is the best damn mac n cheese ever :) I the cheesy part remained mostly the same, I just doubled it. I used a chili pepper rub on the chicken the night before. For all my troubles all I ended up with was an empty dish :) Thanks @griffin!

    @Charlesmaneri that post was from July 24th earlier this year. We are expecting a high of 79 today here in Dallas before the cold front hits tonight, though and we won't see temps above 45 till at least next Thursday. Gonna be a cold week.

    @Letz4wheel glad you liked it. We've made it 3 or 4 times since and have heard nothing but great reviews from other people who have tried it. Doesn't taste quite like mac n cheese and it doesn't taste quite like King Ranch chicken either, but still damn tasty.

  • Griffin okay that explains it then here in Long Island N.Y. we have temps in the am of like 23 degrees by afternoon it gets up to about 40 and when the sun goes down back down to the low 30's or hi 20's

  • Once upon a time my mother used to make a King Ranch casserole from scratch.  Sadly the recipe seems to have vanished and the only ones I can find online are the ones that use pre-made soup/chips and the like.

    I agree 100%.  This looks great and like something that would be great left overs if there was some left.  I love my wife's King Ranch Casserole and it's usually good for 2-3 meals when she makes it.  It is never wasted.  Combining that with mac and cheese?  I believe Aristotle had something to say about that kind of thing.
