I remember when I had a gasket..............careful with that probe. I assume that's a Maverick. They don't do well at 450 (even the ones that say they do). Especially direct. You need to get a Thermapen or something similar to spot check it when you cook hot and direct

I agree. Thermapen is next week. Have to make due for now.

Also, for a cook like that, no need for a probe that stays in like that.  Just test it by look and feel.  Maybe double check with a quick poke.   Looks good though.  Love LB!

Thanks Gooey.....looks great.  Gonna give flank steak a try for some beef fajitas either tomorrow or Sunday.  Cooked some skirt last time to mixed results......don't really care for the cut.  Betting I'll have better luck with the flank.
