Never tried it, feeling like some grouper would be awesome for dinner. Any tips? Do I need a pan?

Grouper is excellent blackened. Get some "blackening seasoning" like Prudomes Redfish Magic. Melt some butter and allow it to cool, but remain liquid. Refrigerate the fish right up to the time you are ready to start. Dip the cold fish in the melted butter and the butter will coat the fish, now sprinkle the blackening seasoning on the buttered fish. Have your egg up around 600 degrees with a cast iron skillet pre heated to that temperature. Carefully drop the seasoned-buttered - fish on the skillet for about three minutes, depending upon the thickness of the fillet. Flip and blacken the other side --- serve right away!!
