To the mother of the pig that I am eating this weekend.  I just want her to know that her son (or daughter) is really making my family happy!  Happy Memorial Day Weekend Eggers!

    Sounds like a good day lined up!

    How many racks of ribs can you fit on your XL? I squeezed in 2 full racks of spares on my large last weekend, but am always interested in finding out how to get more on there.

    @sookie we are all newbs at one point. Give me a bit and I will find some good threads on bacon. There are a ton on this site! The one that comes to mind is "all this talk about bacon" by @chubbs.

    @caliking never tried more than 3. I would guess you could fit 6 or so without get too creative. The way you act you could prolly figure out how to fit 20 or so :-))

    I use an A-Maze-N-Smoker to cold smoke. Works like a champ


    I use the large one and get at least 8-10 hours of smoke out of it

    I also use the ams. I buy my pork belly for US Foods. You have to have a business tax Id to setup account.
