I've cooked 2 flats travisstrick style and botched both. Guess I'm a maroon. Regardless I want to try a packer this weekend Centex style . I'm going to try to find a small one but it's still more beef than we need. Should I cook the entire piece and freeze some or can I separate the flat and point?
