I'm struggling to really trust my temperatures and wonder if you can share your thoughts. Dome thermometer sitting round three hundred.
stuck an electric thermometer at mid level to compare. (Rested it on a rib rack).
Difference in themp was very high - 300 dome vs 190 mid dome / meat level
What am I supposed to trust !

1) were both thermometers calibarated?2) how long has the dome been at 300? the longer it's stabilized the smaller the difference should be.3) was the midlevel thermometer near any food? was the rib rack in the whole time the egg was heating up?Bx - > NJ ->TX!!!All to get cheaper brisket!

Pull your dome thermometer out and check it in a pot of boiling water (adjust as needed). There will be a differance in dome temp vs grid temp -30 to 50 degrees.

not all thermometers are accurate measuring air temp.If you have a food probe on the digital, it won't be accurate on air temp. This is why there are 2 different probes on things like Mavericks, digi q's etc.Keepin' It Weird in The ATX FBTX

Put your hand on the dome, if it feels hot it's 300, if it's not it's 190
