egg fever- Temperature control

I'm struggling to really trust my temperatures and wonder if you can share your thoughts. Dome thermometer sitting round three hundred. stuck an electric thermometer at mid level to compare. (Rested it on a rib rack). Difference in themp was very high - 300 dome vs 190 mid dome / meat level What am I supposed to trust !
