It’s almost football season, so we’re perfecting our favorite tailgating and homegating recipes! Ground Chicken Meatloaf

Poultry loaf? Either way, you know who is working from home today. That means no wife and no kids, just the dogs, work, and the BGE. What to cook? Haven't worked much with ground chicken so decided to take a stab at using it for a meatloaf.

3lbs ground chicken
1lb pork sausage
1 cup diced carrots
1 cup diced celery
1 cup diced onion
2 cloves minced garlic
5 tsp kosher salt
1/2 can beer
1 cup baby cheddar goldfish crackers
1 cup shredded cheddar cheese
Handful of freah ital parsley, chopped
2 tbs worcestershire sauce
1 tsp black pepper
Sage to taste
No egg

Mixed it all up and threw it into an olive oiled foil pan and into a stabilized Egg at 300F grate indirect, no smoke. See ya 'round dinner.

    Sounds really good!  I would cover it with bacon strips ;)


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Looking forward to hearing how this turned out.

    I remember as a kid my Mom making a turkey loaf. I wasn't impressed with the recipe she used. I would have preferred her regular meatloaf, but like I said, it was probably the recipe.

    It's FABULOUS!!!! Dinner is at 5:30 today but it got done early so I had to try a piece. Had to have another! And, this is the 'girly' version! Next time around will be will jalepenos, jack cheese, tomatoes, and cilantro! WoW!
