Chunks or chips?

I don't seem to get as much smoke as I would like with my egg. Should I be using chunks or chips? and how should they be arranged on the coals?

Use both and just toss in. I never do long all night cooks. With chicken I like chips (very few).Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I use chunks. Admittedly, it's a little hit and miss when I layer them in with the lump for overnight cooks, but I let the Egg stabilize and add chunks to the lit spots a couple minutes before adding the meat. It works pretty well. I don't know how much smoke a porkbutt takes on after the first 7 or 8 hours, and my system always provides that for me.

This is a "Ford" vs "Chevy" topic...as mentioned above, makes no difference. The key is to mix throughout the lump. For low&slow cooks, the fire travels around the lump load. Key to smoke is to have smoke wood where the fire is. For that reason, I prefer using chips which I disperse throughout the lump. And I unscientifically equate a good handful of chips to a chunk. YMMV-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
