How are you going to cook it? USDA just changes their guidelines. I cook chicken either spatched or whole upside down on vertical roaster with butt high in the dome. Pull when Thermapen reads 160 -65 breast 170 thighs. If you don't have a good temperature probe put that first on your wish list.Large, small and mini now Egging in Rowlett Tx

About an hour and always cook to temp like @Austin Egghead said. I spatchcock and cook direct raised at 400. This one going on in a min.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I spatch them like Mickey, raised grid at 400 takes about an hour._________________________________________________Don't let the truth get in the way of a good story!Large BGE 2006, Mini Max 2014, 36" Blackstone, Anova Sous Vide
