We hope everyone enjoyed their Fourth of July weekend and is excited for more warm weather grilling! This week, we’ll be making these two burgers: Stuffed Portobello Mushroom and Caribbean Chicken, and also eating lots of these Ice Cream Sandwiches in honor of National Ice Cream Month! Wokking in the Wain

I bought all the ingredients today to do up some stir fry tonight. I take a look at the news and see the radar and a storm is coming, well that is not stopping me from what I wanted to eat for dinner. I rigged up my tarp (Redneck Sunbrella) over my pergola and went to work.

  • Chicken
  • Chinese Eggplant
  • Bok Choy
  • Shitake Mushroom
  • Ginger
  • Snap Peas
  • Diced Shallots

I made a sauce of Rice Vinegar, Soy Sauce, Honey, Chilli Paste, Corn Startch and poured that over when the veggies were almost done.

Everything was great even if it was pouring down rain outside.
