Greetings all. First spatchcock attempt. I must say, I'm amazed with how juicy it turns out. I injected with a flash heated garlic/white/butter and herbs concoction. Then rubbed with Montreal chicken. Not a fan of the Montreal. First and last time for me. Too sagey. Anyway, it turned out great cook and moisture wise. I just couldn't get past the rub. Although, my 6 year old and 9 year old killed it! My 9 year old daughter told me her experience was 8 out of 10. Verbatim. I can't make this crap up! Last time for Montreal for me. But, ill definitely cook with it for the kiddos. I used ever so slight of cherry wood chips and that was nice.

Looks great from here! That is a nice plump bird. Maybe it is just the camera angle...but it looks like that chicken had dumps like a truck :P.I don't believe I have ever tried the Montreal chicken rub. I guess I won't!Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
