that article is so close but then he lost me when he trimmed off the best part, dont trim it

I think he only trimmed off the best part on the 109 Export cut, since it was dessicated  from the dry aging since it was over trimmed for dry aging.

Lesson? Get a rib roast with the fat cap intact.

Full disclosure: I would have made bleu cheese beef jerky with that spinalis. It IS the best part!
