We hope everyone enjoyed their Fourth of July weekend and is excited for more warm weather grilling! This week, we’ll be making these two burgers: Stuffed Portobello Mushroom and Caribbean Chicken, and also eating lots of these Ice Cream Sandwiches in honor of National Ice Cream Month! Eggplant Pizza

It was a pizza night and wanted something a bit different.

Ingredients:
Seasoned Olive oil
Tomatoe sauce (thinly applied)
Browned thin sliced eggplant (salt and peppered)
Cheese sauce
Parmesean cheese

The cheese sauce was made using Mexican cream, parmesean, tyme, chives, and parsley combined in a sauce pan over medium heat.

Also made a pepperoni pizza as a backup. Both were eaten.
