So here what I did since I didn't replace my gasket.
The brisket did have a nice smoke ring but I removed the point for burnt ends and cut with the missing point up.
The brisket turned out great.
Tried something newwith the ribs, putting apple sauce on my ribs while foil. Turned out with great flavor just way over done. Did 2, 2 then .5 and still was fall off bone at 250. The 250 is BBQ guru attached to the grate. I'm hoping to get something closer to competition with clean bite.
