Sous Vide Fever

I've been very interested in in The sous vide cooking.  I would love to try it.  My questions are:
1) what is the best machine to get?  Size?
2)  I'm short on space.  could I put it in a roll out drawer next to the sink and either hook the drain into the sink drain or pump the water out?  I don't even know the process.  I just know you have to fill it with water and I assume you drain it after very use..

  • I have the sous vide supreme demi. It's a self contained unit around $350-$400. NOLA has the rig I would get if I were to buy today which is the poly science unit. It's around $800. There are cheaper setups you can use with a crock pot, rice cooker or stock pot starting around $150.

    There are self contained units, I think CT has one, the size of a bread box and $800 units you can attach to the side of any pot/container that is big enough. Suggest you read up on the various types and as CT said - How much money you got?

    I have the fever too.  I asked santa (the wife) for this one here to test the waters a little more.  I have done a few steaks in my rice cooker but the temp swings are kinda hard to maintain.  There are 2 poly science units and some great videos on their website.  Here is the cheaper one.  And here is the more expensive one I believe that NOLA has.  I lean towards the head style because I am running out of kitchen storage space too many toys.  Watch some videos on it they will blow your mind and centex posted a short rib post several months ago that sold me on it.  Just get the best you can for your budget and enjoy!

    I think this unit is the best bang for the buck.  It'll do everything my more expensive unit will do, doesn't take up counter space (just attach to a cooler, pot, or any container) and it's around $500.  The resale value on these are high, so you can always flip it and get most of your money back if you just don't get into it.

  • That circulator is very cool.  Not really a storage problem.  I might go for it.  It is much more compact than the self contained units and would probably do more volume.

    Nola......I don't think there will be fire and brimstone....but you'd better wear your PFD to work!

    Nola......I don't think there will be fire and brimstone....but you'd better wear your PFD to work!
    It's way more flexible too.. You can use a cooler or a pot, or a plastic tub, 5 gallon bucket. If you need a little more space, find a bigger container. That's the true upsell for the circulators in my mind.

    mine does not but I've never had any issues- even when it was packed.

    First time I saw that, I thought, damn, they modeled it after a Japanese personal massager. (not that I know what they look like).  It looks like a great design and price.  Bring SV to the masses.

    yes. The circulator is better (and i have the SVS). For only $50 I wouldn't give it a second thought

    If they were really smart, they would make it a 2-fer. Great in the kitchen and the bedroom. Brown-Chicken-Brown-Cow! (and all for $359!)

    if you read the site, it is a kick starter micro loan deal. They are "trying really hard" to fill orders for the initial investors. It looks cool but they have no experience with any of it. Slick site but I would wait until it's available commercially

    it seem like everytime I want to say something you beat me to it.  Plus I have 15 s.v. bookmarks on my macbook reading list because of you and centex.  Now I just need to make one appear and see how long it takes to get asked where it came from.
