I just found a small brisket in the freezer. It is from a cow we bought a while back. This is a free range, grass fed, no hormone ... Black Angus. Do you all think that it will do as well doing it the Travis way? My concern is that it is sure to be very lean so I was thinking that cooking it in the lliquid would help it out.

Yep. Perfect way to do it. Would make great burgers too if you want to go that route.Keepin' It Weird in The ATX FBTX

I have not done any briskets like the one you describe but I bet it would work great.
