Meatloaf post inspired me!
...Your post had me craving meatloaf so I gave it a shot .I don't have a v-rack yet so I used the top of my broiler pan (which had been rendered useless since the egg purchase) with some foil. It turned out deeelicious. I didn't get the smoke ring I was looking for but my craving has been satisfied! Will definitely cook this again. Served it with pinto beans and potatoes.
