Lizzie's overnight brisket fun time

OK- here we go. There are 3 known briskets going on in the next few hours and a few first timers. To all of you who are doing packers for the first time: I'm putting mine on at 11-12 tonight. No matter your time line, here is what you do to prep: Cut all the hard fat off your brisket. Then trim the fat cap down to 1/8"-14" inch thick. coat your brisket with rub until you cannot see the grain of the meat. let it soak in for like 5-10 minutes before turning over and coating the other side. You can slather on mustard in a thin coat to hold the rub if you want to. Clean out your egg and put new lump up to the top of the fire box. light the lump right in the middle and let it catch to about the size of a glowing red softball. put 6-8 chunks/tons of chips in the lump and let the dome temp settle between 260-275. Check in with me before you put the brisket on if you are not comfortable with what to do.

    This just keeps getting crazier. I had my phone in the hand from taking the photo of burnt arm hair and threw the wood chunks AND my phone.!!  I screamed OH NO, I just threw in my phone!   :-O

    We were able to retrieve it and it's ok!

    Looks like it's going to be a late night just following this thread. Wish I planned a brisket for tomorrow instead of lamb chops and strip steak. I'll keep up with you all drinking even if I'm not cooking along. Need to see a pic of the phone Lizzie.

    Well-the biggest challenges are getting the brisket going and then figuring out when to land it.  Based on the launch the landing has a whole lot of potential...gonna be one hell of a journey!

    I was panicking!!  I could not see anything because of all the smoke and it is dark.  I have this headlight that I use on night cooks, and I had these huge welding gloves on and could not turn on the light for anything.  The whole time my hubby is yelling get it out of there, so I just reached in pulled out some lump and there was my phone.  Hoping to never repeat that!  SCARY!!!

  • OK- we are a bit of a mess over here too. My gasket is totally fried and I can't keep temp down. I have just loosened every bolt on my hinge and smashed my dome down. still not great but a little better. Still the silver medalist compared to Lizzie though!
