How do I cook sides with protein?

Now, after a week of egging on my LBGE, I can light a good fire, control temps pretty well, and put out the fire. Also cooked some decent chicken, meatloaf, and store bought pizza. What I can't figure out is how to cook sides along with the fish, chicken, or meat so that everything is ready to eat at the same time. Any suggestions would be greatly appreciated.

    Ears of corn with the husk on, take the same time as a spatch ckn.

    I usually make some sides on the perimeter with the meat in the middle and others while the meat is resting
