Country Style 3-2-1

I picked up Country Style Ribs on sale.  Has anyone ever tried the 3-2-1 method to keep these from drying out?

    Forgive my ignorance, but aren't country style ribs just pork shoulder strips?

    Yes, I am trying to keep them from drying out before the collagen dissolves.  I am going to try to cook them a while and then foill before finishing at around 250 deg dome temp.  Just wondered if it would make a difference.
