4th of July Pulled Beef

What screams happy birthday USA more than a taco fiesta! Loaded the pulled beef onto corn tortillas with all the toppings....cabbage, jalapeños, pickled red onions, cilantro, and queso fresco. All served up with refried black beans and cilantro-lime rice.

    Not too long currycoma...about 6 hours at 250 dome. Each one was only 3lbs.

    Don't be afraid to bring pulled beef up to a higher finishing temp than pulled pork.  205-215 not out of the question.  Mine usually pull sufficiently well around 205 or so in the thickest part.
