I use chunks. I'll add a couple mesquite chunks as the flavor will impart during the roasting.

Couple more steak questions
1) How many chips would you put in cup wise for a good flavor?
2) what cooking times Ragtop for a medium doneness?
I can't give you great guidance on times. Depends upon thick the steak is, the temp when you put it on the grill, how hot your fire is, etc. The sear is about 2 minutes a side for me. Total cook time is typically 10 - 15 minutes depending upon thickness and when I took them from the fridge. If you cooked on another grill before the egg, just follow your instincts from your prior experience. I also have a Thermapen instant read thermometer; but for more than two decades I used the Jedi method (i.e. I sense that my steak is done) and rarely overcooked them.
