Guava wood smoked turkey

Anybody done this? I just received a box of guava wood chunks from Hawaii and I'd like to try it this weekend on a turkey. Curious about how this would flavor the bird.

  • BS,
while i haven't tried the guava with turkey yet, it is fantastic with chicken. ..very subtle taste. ...i usually use apple for turkey with great results, and i think the guava would be equally good....i don't think i'd throw more than one or two chunks in there, turkey will absorb a lot of smoke. .. .should be good though. ...

  • mad max beyond eggdome,
Thanks, I think you are right. I like apple on turkeys as well, I'm going to try the guava and see...

BS,[p]I have done a few turkeys with guava and a little goes a long way but we all have our different levels of smokiness...that's how I do it. Try putting in a couple of chunks to start and add one at a time as they burn up. Guava is dense and does NOT require soaking. This usually leaches out some of the good stuff (for lack of scientific jargon) that is in the smoke.[p]I have messed up on turkey once by adding way too much wood and cooking too long.[p]Good luck and let us know how it turns out![p]Aloha![p]Greg
