Made some pizza for lunch and was very happy with it. Got a ways to go but Im getting there from all the posts on here. One thing Im finding is I don't like parchment paper. I think Im going to try to do pizza without it. Any thoughts?

I use parchment for the ease of handling but yank it out after a minute

Screw the parchment. If you're serious about making pizza get a super peel.

Man, and I thought I was serious about making pizza this whole time.

I make pizza every Friday night and I have never used parchment paper. I have a wooden peel and I put about a tablespoon of corn meal on it and take my hand and rub it all over the peel.I roll the dough out to my liking, then put it on the peel to assemble. Shake it a couple of times to keep it loose as you put on the toppings.After a little practice you will be able to transfer it to the pizza stone with a little flick of the wrist. -

Might just be me, but I don't like cornmeal on my pizza.
I find that the vast majority of the cornmeal stays on the peel and very little sticks to the bottom of the pizza. -
I found the corn meal added a bitter flavor. I do paper, and remove it at around 5 minutes.
XXL #82 out of the first 100, XLGE X 2, LBGE (gave this one to daughter 1.0) , MBGE (now in the hands of iloveagoodyoke daughter 2.0) and lots of toys
