about to do my heaviest butt... just shy of 8lbs.. was going to have it ready to be thrown on somewhere around midnight thinking it would take about 14hrs plus... was going to go dome at 250 or so...  here are my starting pics :).... i have a bunch of rubs in the cabinet including some DIzzy's.... I have been liking this Lamberts of late though...  This is also the longest cook I have attempted.  I actually stacked the lump for the first time rather than dumping.. I had a couple of bags of cowboy i got from HD..  The bottom of this fire is stacked with huge huge pieces - i couldnt believe how big all the lump is in these small bags..  threw some apple chunks on top..  any suggestions?
