Optimum brisket temp?

All,

Doing my second packer brisket tomorrow night. (got the new cyberq wifi)

What is the optimum final temp.

Any tips you have would be great!!!!

    I start checking mine at 195. 195 to 205 is the range I like.

    190-205, I like pull at 205 and call it a day.

  • I start probe checking at 195 until 205.  Once the probe slides in with no resistance, it is time for the wrap and rest for me.
