Pork Loin from a few weeks ago

I forgot to post this a few weeks ago but I got nothing but time now :)

Made a pork loin for dinner one night a few weeks ago. I made a paste consisting of EVOO, dry basil, fresh rosemary, salt, pepper, garlic and some Cow Lick dizzy rub. 


Did an indirect cook at 350 with some apple wood.. Also made a side of potatoes that I sliced thin and layered in a tin foil. I sprinkled the potatoes with basil, salt, pepper and Cow Lick Dizzy Rub. Topped off wtih some parmesan and asiago cheese. 


My wife is scared of really pink pork so I let it get to 150 and pulled. It still came out super juicy and made for fantastic sandwiches throughout the week with the leftovers.
