Smokey Fried Chicken Wings

Tonight for dinner... to keep the stretch of using the egg going, I smoked some chicken wings @ 250 for ~2 hours... then am going to fry them for 30-60 seconds to crisp them up and then coat them in franks/butter...
Also some more chicken wings just fried up with butter + ranch/cayanne (spicy ranch)..
Plus some pizza, but just delivery as I've yet to get a stone to start making my own... but one has been ordered, so that is coming soon!
Pics of wings to come... no pictures of dominos pizza required!

i like smo fried, what i found is that you really need to hit them hard with smoke as the frying washes some of the flavor off

I like mine a little less crispy and more on the baked side. This was today's lunch.

With a PS legs down? I am doing half that time direct heat, but they are not hard cooked.

@Doc legs up indirect at 350 flipped once for a crisper cook at anothr 20 min. Total 1.20 hrs.LET'S EAT

Leave them uncovered in the fridge for a few hours before you put them on. Cook them raised direct at 375, flip once. Plenty crispy. No need to fry them.XL,L,SWinston-Salem, NC
