Just pulled brisket, foiled and wrapped in towel and put it in the cooler, but I've got hours before we slice. It'll probably be 4 hours. Do you think it will be ok?

Was it fork tender when you pulled it? What temp you pull it at? 4 hours is about the max I have heard. Was asking about temps because if pulled too early can just throw her back on.Columbia, SC --- LBGE 2011 -- MINI BGE 2013

I didn't check for tenderness, but the temp was 190+.

I left a foiled and towel-wrapped 8lb shoulder on my counter for 7 hours before pulling and it was fine.

ok, great, thanks for the feedback.

With brisket, its more about tenderness than temperature... Also, should stay > 160 for 3-4 hours foiled, toweled, in cooler...
Also, could cut up some point and make some burnt ends...
