Sorry,I didnt turn the pics.Turned out awesome,But the skin wasnt as crisp as wanted.I had a hard time keepin the dome temp between 350 and 400. Full Circle lumpLET'S EAT

I cook game hens at 400-425, skin up, indirect. This is the same temp I do chicken pieces at.
I do full sized spatch-cocked chicken at 350. I think these little hens cook so fast I think you need a higher temp to get the skin right.
