I have read a lot about what should be your first thing to grill, and Spatchcok(whatever) chicken pops up!
So after a lot of reading , i came down to the conclusion that down here in Mexico, we just call it: Pollo Loco!!!

Men, easier fed than understood!!


  • Lots of Mexican dishes do great on the Egg.

    Tacos al Pastor
    Carne Asada
    Fajitas (Texan, not Mexican)
    Frijoles a la charra
    Chile Rellenos casserole

    I started with spatchcoked chicken myself.  Don't let people scare you away from the "hard" cooks.  There aren't many.  Even brisket is easy if you just follow some instructions.
