black butt?

the butts i cooked turned out awsome, but they did not turn black.what gives.everybody i talk to say,s theirs turns black on the out side.


  • How much, if any sugar was in your rub? It's the sugar burning in the bark that gets it black.

    Might be the density of the rub.  No sugar used in mine, but I used a lot and the outside was black.

    I have been known to rub with brown sugar on top of the rub of choice.
