Cooked my first brisket today and I have one question... Brisket where have you been all my life?

Bought a 7 pounder from Wegmans a couple days ago so I could try this meat I keep reading about.  Put on the Egg this morning and nine and a half hours later we had some of the most flavorful meat I have ever tasted.  Followed the "Braggin' Rights Brisket" recipe in the SMoke & Spice cookbook.

My wife asked why I was taking photos.  I said a wise man once said "pictures or it didn't happen".

    Did you cut that with the grain?

    I cut it across (perpendicular) the grain (I think).  I read on a blog somewhere to cut a notch before cooking while you can see the grain direction so when it is covered in bark you know where to start.

    OK, for some reason hat first cut pic looks with the grain.  Just wondering, and yes, against the grain is def best.
