So I bought 3lbs of pork belly from my butcher today.  I plan on cooking this, a butt, cornish hens, and sausage on Monday (Sunday night start for the butt).  Wondering what is the best way to cook the belly, am thinking of just scoring the fat side, and putting some rub on it, putting on egg with the butt and seeing what happens.  I won't cure this one, so looking for the best way to prepare the meat.  Any suggestions?
