    There is another high temperature method out there that maybe someone else can help you with. I like the slow method because it gives you a nice even pink all the way across the cut.

    I have not done a PR on the egg - some don't like the smoke flavor.... we typically put it in the oven at 325 after rubbing it with EVOO, thyme, minced garlic, cracked pepper and salt.  Take it out at 120, cover with HDAF for ~30-45 minutes and it will rise to ~140 - perfect pink med rare center and fork tender.
