Scottish rolled brisket

I have a 2.2kg rolled brisket, is it ok to cook rolled or should I unroll it and cook as a "flat" brisket?

It's my first go with my large egg



  • I just moved to Australia and they cut brisket into a roll also. I don't know how to cook it. I'm assuming flat? How did yours turn out?
