After searching for special items for the holidays I came across something that is maybe not new but it was new to me.  Bacon wrapped dates. Any new (to Me) recipes for bacon wrapped anything.  Perfect for the BGE.

    Burr baby,

Bacon wrapped sounds really good but how do you keep from over cooking the fish?

Great question.  I got the recipe from a native Alaskan.  Partially pre cook the bacon until it is getting done but still limp enough to wrap and hold with toothpick.  Works really well, fish gets done and bacon gets crisp.

Thanks for the tip and I will be cooking up some and it sounds great. Do you serve them with any dipping sauces or do they stand on their own?

Bacon-wrapped figs stuffed with cheese (blue or goat or w/e) are my favorite, but ABT's are just such a good 'classic' ! :)

I don't see the Bacon Explosion listed above. I have made it on my old Smoker and it is very good. It originally said to put Crisp Bacon in the middle when you roll it up but I didn't like that and changed it to some Onions, Green Pepper, Mushrooms and Pepperjack cheese. If you are not familiar with this it is Italian Sausage placed over a Bacon Lattice work with Pork rub on the bacon before the sausage then the mixture I stated above in the middle. Roll up the sausage and then wrap the lattice work bacon around it and smoke it on the BGE on about 250 degrees for about 2-3 hours or until internal temps reach 165 degrees. This really good and I made several at a time for a group of guys for breakfast.

  • If you like stuff wrapped in bacon, check out the thread I stared on meat glue. it will open your bacon world to new possibilities. I'm doing a few cooks with it this week to post pics (just bought 2lbs of bacon today). Something is just right with the world when you have 2 lbs of bacon in your cart. Bought a brisket too to post pics under my Brisket Thesis that I wrote earlier this week.
