I am new to this.......What is the best way to keep the temp at 225-250?.............Also, best way to keep charcoal from the holes inside the egg?  Thanks for any help............

    Keep the vents nearly closed after lighting but not closed.

    Ash is the only thing to be concerned about in the holes ... just poke them if they are blocked.

    Never eat anything passed through a window unless you're a seagull ... BGE Lg.
