Roast Chicken UK style!

I have just cooked the best Roast Chicken ever! My foodie friends (over sixty years experience) said so!
I roasted it over hickory wood chips (soaked for 1 hour), with a rub of fresh thyme, oregano and garlic with ground cumin and paprika, salt & pepper.
In the tray I poured a large glass of white wine to maintain moisture levels. 1 hour 15 mins @ 180c / 350f - fantastic!!  John Robbins
