We hope everyone enjoyed their Fourth of July weekend and is excited for more warm weather grilling! This week, we’ll be making these two burgers: Stuffed Portobello Mushroom and Caribbean Chicken, and also eating lots of these Ice Cream Sandwiches in honor of National Ice Cream Month! Orange Roughy Lemon Zest

2 filets Orange Roughy or other fish

1 lemon & zester or cheese grater

lemon pepper to taste

garlic salt to taste

1 TBSP flour

1TBSP Parmesan cheese

1TBSP Italian bread crumbs or plain


1TBSP butter

Cast Iron pan that will fit on BGE


Clean and dry fish

Pour 1TBSP EVOO onto filets and coat with fingers

Apply lemon pepper & garlic salt to taste on both sides of fish

On plate that filets will fit on mix together 1TBSP of flour, bread crumbs & cheese

After mixing dip, spread evenly over plate

Zest lemon into small bowl, the smallest you have and add 1TBSP EVOO

Heat Cast Iron pan for 5 minutes on BGE with 1TBSP EVOO & 1TBSP butter

Dip filets in batter mixture

Cook 4 minutes per side

While first side of filets are cooking apply 1/2 of lemon zest & EVOO mixture on center of fish in narrow strip

Flip filets after 4 minutes or until golden brown

Apply remaining lemon zest and EVOO in same manner as before

After 2nd side has cooked with zest on filets, flip one last time to brown zest for 1 minute

Fish is done! Enjoy


I usually serve with salad and sometimes over bed of rice. Meal without rice is very low in carbs and a healthy low calorie dinner.
