Shrimp: Heat 2 inches of oil in a dutch oven over medium heat until it is 350 degrees or so.
Whisk the eggs in a shallow bowl. Whisk the flour, cornstarch, and 1 tsp each salt and pepper in another bowl.
Dredge the shrimp in the egg then in the flour to thickly coat. Fry in the oil about 1-2 minutes until golden brown. Transfer to paper towel with a slotted spoon to drain.
