We’re feeling pretty super, how about you? The big game is fast approaching, and while we love football, we love an excuse to invite people over and cook even more! You too can cook like a champion with recipes from Dr. BBQ’s NFL Gameday Cookbook: Grilled Tuna Sandwiches from Seattle and Baked Brie from New England. Who’s going to win? You’ll have to cook both to find out.

Ingredients
• Brine Solution Trick (see below)
• Copper River King Salmon (or other variety)
• Seafood rub

InstructionsI used the very cool brine trick found in http://www.biggreenegg.net/archives/2002/messages/42934.htm, but added about ¼ cup brown sugar. After draining and drying the salmon, used Tom Douglas &#034Rub With Love&#034 salmon rub -- about 2 tsp per serving. I'm sure any seafood-friendly rub would be just as good.Add soaked alder or mesquite chips to coals.
Spray grill with non-stick spray before adding salmon. Also used a bed of green onions to prevent sticking.
Cook direct at 250, about 40 minutes, or to 150-155 internal temp. NotesNumber of Servings: Time to Prepare:
