Chicken Fajitas

Ingredients

• 1 Tbs fresh lime juice
• ¼ Cup olive oil
• 2 ½  Tbs fajita seasoning or to taste
• 6 boneless, skinless chicken breast
• 1 onion; sliced
• 1 each green, yellow and red bell pepper; slliced
• 1 burrito size flour tortillas; heated in microwave
• 1 8 oz package colby jack cheese; shredded
sour cream to taste

Instructions

Combine olive oil, lime juice, and 1 ½ tablespoons fajita seasoning. Add 6 chicken breast halves and marinate 2 hours or all day.
After cooking, place chicken in tortillas, top with pico de gallo and sour cream. Roll tortillas.
Serves 4.

Grill chicken breast over direct heat @ 450° until done. Slice and stir fry onion and peppers with olive oil and 1 tablespoon fajita seasoning on hot griddle on top of stove while cooking chicken. When breast are done, bring in and place on griddle with peppers and onions. Cut chicken into strips. Serve on griddle, sizzling hot.
