Big Green Egg - EGGhead Forum - The Ultimate Cooking Experience...
We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. We especially love these Beer Pork Tenderloin and Ground Beef Acorn Squash recipes! It's time to think about getting out to one of the many #EGGfests around the country - see a list here

Scallops Wrapped in Bacon

edited November -1 in Seafood

Ingredients

• 1 lb Sea Scallops (should be around 24)
• 1 lb Lean bacon (your favorite style)
• Favorite rub (BGE or other)
• &#189 Cup Lemon Juice
• &#189 Cup Maple Syrup
• 24 Toothpicks (soaked in water for at least 30 minutes)

Instructions

Take a piece of bacon and wrap around each scallop. It may wrap twice but that's OK.
Secure the bacon with a toothpick.
Sprinkle the exposed ends of the scallops with the rub.
Place all the scallops into a container so that they are touching.
Mix the lemon juice and maple syrup and pour over the scallops.
Cover and place in the refrigerator for 3-4 hours.

Place the scallops onto a seafood grill (or use a sheet of aluminum foil with holes punched into it over a regular grill) over a drip pan.
Cook for 30 minutes at 375.

Notes

Serve with your favorite cocktail sauce.
