Garlic Peppercorn Char Crust Guava Wood Smoked Pork Chops

Try it - amazing results. Was just looking to do something different with pork chops tonight, so I coated them with olive oil and garlic peppercorn Char Crust, seared, rested, then smoked with Guava Wood (man, this stuff is GREAT!) until 140 internal. [p]I committed the hungry man's sin of taking zero pictures, but take my word for it these were some of the best chops yet. The Char Crust seasonings were complimented just right by the light guava smoke. Mmmmmmmm.[p]Cheers,[p]TRex
