beef short ribs:
- rubbed with cider vinegar + DP cow lick + cumin + turbinado sugar
- 250deg for 6hrs (3 uncovered + 1 covered + 2 uncovered)
- cherry/hickory mix for smoke
- sprayed periodically with cider/cider vinegar mix.
