    You might try cutting them in half and roasting 350-375F for 30-45 minutes, cooling then place in a jar and cover with vinegar and seasonings, refrigerate and try in a few days. PS please report back as that sounds great!

    That is very similar to the way Lloyds grandmother made her pickled cabbage.
