retaining low temperature

I was trying to do a pork butt and was unable to maintain a a temp of about 225 for an extended period of time. I was playing with it all day and it was either going lower to 180 or getting to 275-300.

Anyone have any suggestions?

I have watched all the videos and done everything exactly like I was told with no luck.
