How do you keep the wood boards sanitary for the next cook ? After you cook today's salmon, do you flip the board over while you are eating & let any leftover meat/ skin scraps burn off ?
Between uses- do you store the boards loosely or in a giant ziploc or rubbermaid (airtight) container ?

Clean it, freeze it, lightly sand before the next soak
According to Haugen's Plank Cooking -
I just wash them off, sometimes sand off the burnt areas if they are real bad, and throw them on the shelf. Next use they are gonna get soaked for a couple of hours, then burnt or at least heated to 375 or so, never thought of doing anything else :P :ermm:

OK, dummy here asking - what exactly do you mean by "wash" them or what does Desert O. W. mean by "clean" them ? I was thinking that since they are porous wood, they could not have dish soap used on them, correct. So are we talking about just a really hot water rinse ?
